Featuring: Tiny Beets Mushroom Bolognese Purée

Serves: 1 little one (or double for adults to steal some)
INGREDIENTS
- 1 small potato (white or golden)
- 1 cube Tiny Beets Mushroom Bolognese Purée
- Optional:
- A pinch of grated cheese
- A handful of steamed peas
- Chopped parsley
- Olive oil drizzle or dollop of yoghurt for extra creaminess
METHOD
- Using a fork, put holes into the potato and wrap in foil. Bake at 200°C for 35–45 mins or microwave for 4–6 mins until soft.
- Cut it open with a cross and let it cool slightly, add mushroom bolognese puree
- Add cheese, peas, parsley, or a little yoghurt. Adjust texture for your baby's stage.
- Perfect as a meal for littles or a side dish the whole family will eat.
TIPS
- Swap potato for sweet potato for a sweeter, softer version.
- Add lentils, shredded chicken or beans for extra protein.
STORAGE
- Best served fresh.
- If needed, store leftovers in an airtight container in the fridge for up to 24 hours.
